Good Morning, Tore!
Here are some suggestions re. shipspotter points of interest:

Bremen: Industriehäfen with lock.
Bremerhaven: Fischereihafen, Kaiserschleuse.
Cuxhaven: Alte Liebe, Fischereihafen, Steubenhöft, Altenbruch.
Hamburg: Stadersand, Lühesand, Bubendey-Ufer
Ferry Wischhafen-Glückstadt
Brunsbüttel: Kiel-Canal-Locks and all canal-ferries plus canal bridge at Gruenenthal.

Hope this may assist
Best Regards Peter

Morning Tore, I assume you have use of a car?
Have just returned from a trip to Belgium, Nederlands & Germany and I hope some of this is useful.
In Bremerhaven I found it quite difficult to get a decent photo of any ships there. All the container and passenger ship berths are on the riverbank and unless you are on the other side, terminal buildings or container cranes will in the way. You can get quite close to the car carriers but again, I found it hard to get any shots without a lot of clutter in the foreground. (If any local members can put me right, I will try again next year)
I then drove to Rendsburg where I stayed at the Hotel ConventGarten which is right on the NOK canal bank. This was ideal although mostly facing south, the weather was so poor that the sun position did not matter. There are loads of other places but maybe the south bank would be better. (I stayed in Breiholz last time; lots of parking on the S. bank)
I have not been to Emden, Wilhelmshaven nor Den Helder but as I spent 2-3 days in Rotterdam, I think the best place is Slag Maasmond right at the end of Euroweg in Maasvlakte. (All in & outbound shipping passes this spot) The other spot is at the end of the Nordzeeweg from Rozenburg where you drive past all the tanker berths with reasonable opportunities especially in the mornings.
As far as Antwerp in concerned, both sets of locks (Boudewijn/Caulwelaert and the northern set Zandvliet/Berendrecht) are very good not just for traffic but you also get good views of a lot of the other docks. I have found that a lot of the places I used to go are now fenced off but you can still get to the end of the quay between 4th & 5th Havendok. On the other side of the river at Beveren, there is rough track at the end of Geslecht, where you can just about get shots of shipping in Deurganchdok. There are other opportunities on this side of the river but to see the riverside container berths you need to go to Doel. North of the power station off Zoetenbrem, there is a small paved track that leads to a British War Memorial.
I am sure that some of the guys in Antwerp will add some and would be interested as well for my next trip.

(most of the above are shown on Google Maps)
All the best & good spotting!
